Mediterranean crouton
Ingredients for 4 people
4 slices of stale wholemeal bread, a handful of valerian, rocket, wild fennel, parsley, celery, 4 walnuts, some borage flowers, 50 g goat cheese, extra virgin olive oil, salt
Toast the slices of bread, cover them with the herbs, add salt, a trickle of oil, the crumbled kernels and the goat cheese cut into thin slices. Serve hot.
