Melito, I Sapori della Tradizione. Stefano Pagliuca's new shop: passion and tradition
Stefano Pagliuca with his daughters Anna (on the left) and Raffaella (on the right)
I Sapori della Tradizione
On Sundays open from 7:30 a.m. to 2:00 p.m.
The Pagliuca family has been working in the breadmaking field since the nineteenth century and every Sunday 500 pieces of bread was sent to the Porta Nolana market. Stefano is 45 years old and has three daughters. He has made bread for more than thirty years. When he was a child he fell asleep in a big kneading trough. The bread "a canestrella" is kneaded in the evening and put in the oven after 8 hours, without leavening, there is only mother yeast and clean beech and olive branch wood.
Stefano Pagliuca's mythical pizzas
Stefano is like his bread which leavens, changes, doesn't stop, grows. This is the novelty: he has opened a new shop which is located a few hundred metres away from the historical family baker's shop. This is a place of food and wine culture and conviviality. Stefano's products are genuine. Stefano's passion for wine was born about ten years ago with a group of friends: he realized that in this area there wasn't a wine culture. So he decided to put some bottles of wine on the shelves of the shop managed with his wife. Stefano opened this shop with a friend of him, the architect Raffaele Cimmino. It is very cosy, the shelves and the tasting tables are made with beech and walnut wood, the floor is in terracotta tiles and the stairs are in wrought iron. The lights are warm and suffused and there are LEDs not to alter wine. The ambiance has been planned to keep and taste wine at its best, the temperature is about 18°C and the humidity is 75%. The ambiance is air-conditioned and there is a system to absorb scents and foul air.
Stefano among cases of wine
There is a very wide assortment of wine: there are items from Nothern and Southern Italy including rare wines, many vintages and daily wines. There are also the best wines from France, items from America, distillates and homemade beer. There are two floors: on the lower floor there are the wines, a wide tasting counter including an Enomatic machine and glass washing machine and very good glasses. The beech wood counter is not for the sale but for the wine tasting. You can enjoy wine with pieces of bread or pizza. Cheeses and salamis can be enjoyed on the upper floor.

Stefano's initiative is a cultural project, he wants to gather people who love good food and wine. On the upper floor there is a wonderful professional kitchen including the bread machinery, the pizza oven and the freezer. This place has to be a workshop where chefs can cook, friends can choose a bottle of wine and pay the wine shop price and producers can present their wines. This is the place of traditions where it is possible to cook traditional simple dishes like pasta with beans, pasta with beans and a typical Neapolitan salami made with pork and tripe and so on. This shop is rich in delicacies like the bread "a canestrella" (also the wholemeal version), pizzas and delicious "struffoli" and "roccocò" made by Stefano's wife.
"Provolone del Monaco" cheese and other delicacies
On the shelves there are cheeses from Tuscany and Campania, salamis from Sannio, pasta from Gragnano, chocolate and the famous Pepe's "panettoni". There is everything to make Stefano's dream come true. Here you will find refined food and beverages which can be enjoyed with friends. Stefano Pagliuca is able to fly high and by his side there are four exceptional women, his wife and his three daughters.
