La Razza farm The Parmesan cheese is an integral part of the Italian cuisine, it is business and quality, one of the most extraordinary Italian food products. The crust was mixed with pasta and potatoes in the past and now it is used by the chef Massimo Bottura. This is a popular cheese. You can find all the information on the Consorzio website. I recommend the Parmesan cheese produced on La Razza farm, about two hundred hectares including a restaurant, a farmhouse and a course. The main building traces back to the beginning of the eighteenth century, it was a part of the buildings and houses which surrounded the historical Palazzo Ducale between Rivalta and Canali. It was considered something like Versailles. You will find the company history on the website. The farm is managed by the family. This is a very good product. In the sales point you will find all the other products like ham, salamis, balsamic vinegar and wines. It is located about ten kilometres away from the Reggio Emilia motorway exit.
