We are in Eboli, in the Cioffi neighborhood, to visit a dairy, or better, a big and great dairy. This is the Galdi dairy which is managed by the Bisogno brothers who have been in the mozzarella field for three generations. Rocco, Pietro and Fernando Bisogno are Tommaso’s children (he was a great man, he died a short time ago) who took this firm over in 1984. It was set up by Carmine Galdi in 1970. The Bisogno came from Cava dei Tirreni where grandfather Pietro, at the end of the Forties, opened a small handcrafted dairy. Times are changed and they have passed from handcrafted methods to the industrial ones. The Galdi dairy processes about 200 quintals of buffalo milk a day and produces almost 50 quintals of mozzarellas. The firms spreads on twenty thousand meters and four thousand are used to process dairy products. Now there are 20 employees. The three brothers are in the firm every day so guaranteeing perfect organization. With triennial term they alternate in the basic points of the dairy. At the moment Rocco is the governing director, Pietro is responsible for production whereas Fernando is responsible for packaging and shipments. Everyone has his responsibilities and there is a sound union among them. For respect of quality in 1996 they realized an analysis laboratory to control the productive process. Every day the buffalo milk is analyzed and selected with the application of the H.A.C.C.P. system. In this process the modern techniques are mixed with the wise processing of old cheese makers, so taste and fragrance are kept intact. Another sign which shows the attention to quality is the fact that the Bisogno have implemented a Quality System to produce the DOP (Denomination of Protected Origin) Buffalo Mozzarella from Campania according to the "UNI EN ISO 9002" standard which is certified by "CISQ-CERT". Galdi’s mozzarellas are produced with many brands like the Gioiosa, the Biancabontà, the Mediterranea and the BufalGaldi which are sent to Northern-East Italy, Sicily, Northern Europe and even to Asia. For example, in Switzerland, the Coop Suisse, one of the most important supermarket chains in the nation, has been commercializing these mozzarellas for many years. The buffalo mozzarella from Campania is said to be the best known cheese in the world, this is due above all to firms like this one which have been our efficient ambassadors in the world for many years with great effort and seriousness. In spite of big quantities, the mozzarellas produced by Galdi, the only product of the dairy, are unknown in the production area. There aren’t sales points and the firm doesn’t supply hotels or restaurants. Only at the main roundabout of Battipaglia, the Mediterranea commercializes the Galdi mozzarellas with its own brand. If you pass here taste them and enjoy their delicacy. They are worthy of a stop.
