For a tasty gift go to Apulia, to Corato, where the “Cooperativa caseificio pugliese” has its offices. The cow’s, sheep’s and goat’s milk arrives twice a day directly from the breeding located in the park of the Alta Murgia. This territory has a pastoral vocation since the Neolithic and it has been enriched by the transhumance of flocks coming from Abruzzi. The symbol of Murgia is Castel del Monte which was built by the great Frederick II of Swabia. DOP caciocavallo and canestrato cheese, burrate, “primo sale”, sheep’s ricotta cream and fiordilatte are some products which contribute to the success and the enhancing of the Murgia. This Association was born in 1946 on the initiative of farsighted breeders from Murgia who were spread in all the province of Bari. They thought that tendency to form associations was the way to success. They aim at enhancing the territory which is well represented by these products. We can’t say that there is a must product. Every product has particular characteristics which make it unique. The cream of ricotta is obtained from the whey of sheep’s milk, coming form the processing of the DOP Canestrato. Before cooking it again they add a minimum quantity of whole sheep’s milk to whey. The curd is creamy, its taste is velvety, never acidulous, with scents of cream. The DOP Canestrato is obtained from the sheep’s milk. The name derives from cane containers which were used in the past. After breaking it, the curd is moved to the baskets, it is vaporized and then put in salt for 48 hours. This cheese matures for 4-12 months and it is softened with extra virgin olive oil so it is protected and obtains a brown color outside. The 7-8 kilo cheeses have few holes. The aroma is intense with scents of herbs from Murgia and the taste is unique. Visit this place also for the other products. It is located near the main roads so the products can be delivered to all the sales points in Apulia and other areas. To visit the dairy apply to Dr Picerno and Mr Rozzo.

 

From the A14 motorway leave the Trani exit, go on towards Corato and turn into the 231 state road (ex 98) towards Bari. Coming  from Bari, go on towards Foggia. Arrived in Corato reverse to come back to Bari, the Cooperativa is signalled.
