Via Giudecca Vecchia, 39 Certainly fried pizza is fashionable. All the pizzerias propose a particular version, which is often revisited. Fortunately there are some pizzerias where you can eat the original version. Usually they are places where they make just fried pizza and this guarantees that tradition is respected. There is the mythical “basso” in Nardones street in the Quartieri Spagnoli where you can eat without sitting down or walking. The same happens at a pizzeria in Porta Nolana. If you prefer to sit down and be served you can go to the «Case Nuove» neighbourhood, behind the Loreto Mare hospital, where there is a place which is open from 8.00 a.m. and offers breakfast with fried pizza and beer (try to believe it!); you can also choose an easier reachable place, that is, De’ Figliole in the Tribunali area. The sisters Giuseppina, Immacolata and Carmela Apetino, with their friend Santella, continue the tradition of their great-grandmother which began in 1860. This is a historical pizzeria where there is only fried pizza on the menu, even if it is proposed in many versions (unfortunately, there is also the one with Nutella!). The classic recipe is the one with a stuffing of ricotta, a leaf of basil, pieces of pork, pepper and a bit of tomato sauce. It isn’t very light to be digested and many versions have been created just for those people who are more delicate. So salami or other ingredients replace the pieces of pork or ricotta.
